Never Ever Dull
With every conversation, I always seem to end with "Never a dull moment"....our lives are rich, complex, and beautiful stories. Join me in laughing about everyday things and appreciating life-bumpy roads and all.
With the plunging temperatures and the return to our back-to-school routine, I pulled out some of our favorite meals to keep our week simple. If you're like me, there are times when you just get bored with your own recipes or need a go-to meal that's quick and yummy. Hope you enjoy these:
***Many of my recipes call for cooked and shredded chicken. The Fish family from Franklin, TN (I call them the Fish Sticks) passed along a great tip: Buy a whole fryer chicken, place in a crock pot and cover chicken with water. Turn on low for 8-10 hours and then shred chicken. I do this on Sundays and zip-lock bag the chicken to be used during the week for my meals. A great time and money saver. White Bean-Chicken Chili (awesome to serve when your college daughter gives you a 20 minute head's up that she's bringing over a crowd for "real" food) 4 chicken breasts, deboned, cooked, and shredded 1 Tbsp minced garlic 1 can Great Northern beans 1 can cannellini beans 1 can (4 1/2 oz) chopped green chilles 1 1/2 tsp ground cumin 1 tsp pepper, preferably white 1/8 tsp cayenne pepper 1 can (14 1/2 oz.) chicken broth 2 Tbsp water 1/2 cup Monterrey Jack cheese, optional Sour Cream Combine all ingredients except for the last two ingredients. Bring to a boil and then lower temperature for 20-30 minutes. Ladle in a bowl and top with cheese and a dollop of sour cream. Serve with a crunchy baguette and a delicious salad. Tortilla Soup (passed over to me from my wonderful sister-in-law) 4 chicken breasts, deboned, cooked, and shredded 1 garlic clove, minced 2 Tbsp butter 2 14 1/2 cans chicken broth 2 14 1/2 cans diced tomatoes 1 cup salsa (mild, medium, or hot-your preference) 1/2 cup chopped cilantro 1 Tbsp ground cumin Monterrey Jack cheese, cubed or shredded Sour Cream Tortilla Chips Combine all ingredients except for cheese, sour cream, and chips. Cook in crock pot 8-10 hours on low. Ladle in a bowl and top with cheese and a dollop of sour cream. Serve with chips. Veggie Soup (my Charlotte friend, Julie, gave this to me over 20 years ago-still a fav!) Brown and drain 1 lb hamburger meat 2 cans tomatoes 1 can whole kernel corn, drained 1 large can mixed vegetables (Veg-All) 1 can carrots or potatoes, your choice 1 large container of V-8 Dash of Worcestershire sauce Salt to taste Combine in a large pot. Bring to a boil and then lower temperature for 2-3 hours. Pinkie Reed's Sloppy Joe's (my Charlottesville friend and neighbor, Jane, passed over this from her mom) Brown and drain 1 lb hamburger meat 2 Tbsp brown sugar 1 Tbsp dry mustard 1 Tbsp vinegar 1 Tbsp Worcestershire sauce 1 tsp salt 1 onion, finely chopped Ketchup (I never measure! Simply add until you get your desired consistency.) Hamburger buns Combine everything except hamburger buns =) Bring to a boil and then lower for 20-30 minutes. Serve on hamburger buns. We add sweet potato fries or chips and fruit to round it out.
